Induction cooktops are known for their speed, efficiency and precision, but the working mechanism of Induction is very different from other methods of cooking.
Induction cooktops use a technology called electromagnetic induction to generate heat directly in the cookware, which then transfers that heat to the food.
For that reason, they can only work with induction cookware. But, what exactly is induction cookware?

Cast Iron: Cast iron is another great option for induction cooktops. It is also very durable and has great heat retention properties. The only downside is that it is heavier than stainless steel and can be more difficult to handle.
Carbon Steel: Carbon steel is similar to cast iron. However, it is lighter than cast iron and I think this one is better than cast iron.
What cookware does not work with induction and why?
Cookware that is made of aluminum or copper will not work with induction cooktops. This is because these materials are not magnetic and will not be affected by the cooktop’s electromagnetic field.
Aluminum: Aluminum is best when it comes to even heat distribution. But it is a poor conductor of electricity which makes it incompatible with induction cooktops.
Copper: Copper is an excellent conductor of electricity but it is not magnetic. This means that it will not work with induction cooktops.
However, this is not the case with any kind of cookware that is made of Aluminum because there are so many brands out there that make special aluminum cookware that is compatible with induction.
The best example of Anodize Aluminum that works with an induction stove is All-Clad HA1. Despite being made of aluminum, this cookware is specially designed for use with induction cooktops. To make it induction-safe, All-Clad bonded a layer of stainless steel to the bottom of the pan.
How can I tell if your current pan or pot is induction friendly or not?
Now that you know what induction cookware is and why it is important, let’s move on to the next question: how to check induction friendliness.
If you’re not sure whether or not your current cookware is induction friendly, there is a simple test you can do at home. All you need is a magnet.
Simply hold the magnet up to the bottom of the pan or pot. If the magnet sticks, then it is induction friendly. If the magnet does not stick, then it is not induction friendly and you will need to get new cookware.
If you don’t have a magnet, you can simply put it on the stove and turn the induction on. If the bottom of the pan or pot gets hot, then it is induction friendly. If it does not get hot, then it is not induction friendly.
But let’s say you don’t have both a magnet and stove, in that case, you can look for special symbols at the bottom of the cookware. If there is a circled magnet symbol, it is definitely induction friendly but if there isn’t any symbol, it doesn’t mean that cookware can’t be used for induction.
Lastly, you can also look at the bottom of the pan or pot and try to feel and judge the material. If it is made of cast iron, carbon steel or stainless steel, then it will be induction friendly. If it is made of aluminum, anodized aluminum or copper, then it will not be induction friendly.
Can you turn your non-induction pot and pan into an induction friendly?
Unfortunately, there is no such method to turn your non-induction cookware into induction friendly. As we mentioned before, the material of the cookware is the key factor to make it work with induction.
However, there is a method that you can use to make your non-induction cookware work with induction.
There is a product called an induction adapter plate that can turn any pot or pan into induction-friendly cookware. It can be placed between the cooktop and the pot or pan. It works by creating an electromagnetic field that will heat the cookware.
One advantage of using an induction adapter is that you can use your existing cookware with an induction cooktop. Another advantage is that they are usually less expensive than buying new induction cookware.
The downside is that they are not as efficient as using induction cookware and they can be difficult to find.
So, if you want to use induction cooking but don’t have the right cookware, you can try using an induction adapter plate.
